Meatball Madness!!
You'll Need:
Large Meatballs:
2 lbs Ground Beef
1/3 cup Parmesan Cheese
Salt & Pepper to taste
2 palms full- Garlic Powder
2 palms full- Onion Powder
2 palms full- Emeril's Seasoning Salt
½ tsp Cumin
1 tsp of Ms. Dash Original
1 palm full- Steak Seasoning
A bowl of water
Sauce:
Canola Oil
1 large Onions- chopped
1 large Green Peppers- chopped
2 Cloves of Garlic- minced
1 palm full Parsley flakes
1 Can of Plum Tomatoes- slightly pureed "leave some chunks"
1 Jar of Four Cheese Spaghetti Sauce
1 Box of Ziti Pasta
In a large bowl break up the ground beef & season it with the above seasonings "Feel free to add or lessen to your taste"
Mix together and with clean hands and begin forming the meatballs "large ones" as big as your palm, and set aside.
Dip your hands in the water bowl to keep the meat from sticking to your hands so much.
In a large dutch oven type pot, over medium heat, add enough oil just to cover the bottom of the pot.
Add the onions, peppers & garlic and sauté for 5 minutes.
Season the onion mix with garlic & onion powder, Emeril's seasoning, Ms. Dash, salt, pepper & parsley.
Now add the slightly pureed plum tomatoes and the jar of spaghetti sauce and simmer on low while you brown the meatballs.
In a large skillet over medium high heat, add ¼ cup of oil, once the oil is hot add the meatballs and just brown them on all sides to seal in the juices and keep the meatball moist while cooking.
Once all the meatballs are browned add them to the tomato sauce on low heat and let them simmer for about 45 minutes to an hour.
Check on them often to prevent sticking.
Cook the Ziti according to the directions on the box, drain well and ran cold water over them to stop the cooking process.
Now add the Ziti to the meatballs and serve by topping with shredded mild cheddar cheese.
